Madrid Fusion 2006 - Charlie Trotter



The long awaited presentation by Charlie Trotter took place on Thursday, and everyone in Madrid Fusion was looking forward to it. The chef brought with him 4 assistants to Madrid plus a wine expert. In front of the stage, they set up a table displaying a variety of Trotter´s sauces and books.



Sergi Arola, a spanish Chef who resembles Al Pacino, came on stage to help Trotter with the dishes.



The presentation consisted of the recreation of 3 dishes from Charlie Trotter´s first cookbook, ¨Charlie Trotter´s¨. Celebrating the 15th anniversary of the book, Chef Trotter took these dishes and using the same ingredients in totally different ways, using new techniques and textures, created these 3 new dishes. The presentation was fantastic, a very professional performance by this Chicago chef and his team.

Each dish was presented with a wine recommendation for both the older version and the new version. Most new versions were paired with Spanish wines. Chef Trotter also showed how a dish can be adapted to serve with with either white or red wine, with the addition or replacing some ingredients.

Charlie Trotter will do this same presentation in Seattle during the IACP Annual Conference (www.iacp.com) that will take place on the last week of March 2006. If you are in the area make sure not miss this fabulous performance.

2006 version, this time the Pannacotta is served warm (thanks to Agar Agar), the fruits are served in the form of jellies and sauces.
